Celiac Profile

Celiac disease is a genetic, immune related disorder of the small bowel that results in malabsorption. The disease is caused by a sensitivity to the proteins gluten and gliadin found in wheat, barley, rye, oats, spelt and kamut. People with celiac disease who consume these glutinous proteins produce an autoimmune reaction to the foods which cause a variety of symptoms. Symptoms include diarrhea, failure to thrive, distended abdomen, abdominal pain, and unexplained anemia. Other clinical symptoms can include very large and hard stools which are difficult to expel, frequent illnesses (strep throat, colds, etc), fatigue and malaise.
